Salmon Pie
- 2 cans salmon (7 1/2 oz. each)
- 1/2 cup chopped celery
- 1/2 cup grated carrot
- 1/2 cup matzoh meal
- 1/3 cup finely chopped green pepper
- 1/3 cup finely chopped red pepper
- 1/4 cup oil (can be reduced slightly)
- 1 small onion finely chopped
- 1 egg
- 2 tbsp. lemon juice
- salt and pepper to taste
Flake salmon including juices into a mixing bowl. Add remaining
ingredients combining thoroughly. Do not make it mushy. Spread
evenly in an 8" pie plate. Cover with wax paper. Microwave at
high for 8-10 minutes. Let stand for 5 minutes before serving.
For those who prefer, this can be baked in oven for 30 minutes at 350 degrees
Fahrenheit. Let stand for 5 minutes before serving.
