Sauce for Fish or Chicken

  • 1/2 lb. kosher smoked sausage,thinly sliced
  • 2 stalks celery,diced
  • 2 large carrots, sliced
  • 1 medium onion, finely chopped
  • 1 green pepper, finely chopped
  • 1 can tomato soup
  • 1/3 cup water
  • salt, pepper, onion powder to taste
place sliced sausage in large fry pan. cook over low to medium heat.add celery, carrots, onion, and green pepper and saute until tender. add tomato soup and water and stir. add salt, pepper, and onion powder to taste. if desired, you can add a can of tomatoes also.

if cooking fish, use a whole red snapper or red fish with the head on. salt and pepper the fish. put in baking pan. cover with the sauce, then bake, uncovered, in the oven at 375 degrees for 1 hour. serve with mashed potatoes.

if cooking chicken, salt and pepper the chicken pieces, put the sauce over the chicken, and place the chicken in the oven at 400degrees. cook for 30 minutes; then cover and continue cooking for 20 minutes longer.
